Eggplant


I was not in the mood to cook today but I had an eggplant on the counter which had been purchased two days ago just begging to be cooked. I find that eggplant is one of those foods that I have very limited uses for. Well there is eggplant parmesan and baba ganoush. In our house we also make a guyanese eggplant stew made with potatoes and shrimp, guyanese eggplant choka or what I made today indian curried eggplant. Do you have any good eggplant ideas to recommend? I need something new to add to my repertoire.

  1. Berenjena Guisda- Spanish for Stewed Eggplant. But the Dominican way of doing it, they burn the outside of the eggplant first, then scrap out the insides and make a stew/mush out of it to eat with rice and beans. It might not sound good, but it's delish!

  2. Thank you Newburgh Restoration for the Spanish stewed eggplant idea!! What I found so interesting is that baingan bharta (an east Indian curried eggplant) and eggplant choka (a Guyanese eggplant dish) are both prepared similarly by roasting the eggplant first, then scooping out the inside, adding other ingredients and cooking to a mush...both are delicious as well. I'm going to find a recipe for berenjena guisda and try it soon :)

  4. Filipinos make tortang talong, an egg and meat omelet that sort of surrounds a grilled eggplant. They also make plain torta, but my favorite is the one with the eggplant (talong)
